I have a similar problem on my '16 Caravelle. Have to keep topping up the coolant. Last time the light went on I was low but not empty so drove for a time until up to temperature and looked again and it was back up to max! Just had it in to the local garage who ran it up to temp and pressure...

Put a marker on the coolant reservoir and check daily to see if you are losing any. I really hope for you that there isn’t a problem but you need to watch it like a hawk to work out if any of that coolant is getting in to the oil.

I have a 204 DSG T6 and been losing power and having to top up the coolant every couple of weeks, got 84000 miles on the clock, it’s a 2016, 66 plate and I do 2000 miles a month on average. I can see water by the egr cooler so looks like I’ll have to swap it out!

I meant on the dipstick. If you're losing several litres of coolant into the oil, the level would rise and the oil on the dipstick would look like magnolia paint. I'll be interested in the outcome.
The pumps can get gummed up after being inactive for some time, there are two ways that may free it, a few choice taps with a hammer or application of heat with a few taps. Usually it is simpler to just replace the pump though.
