17 Inch Wheel Clearance Question

I have just bought my T6 about a month ago, it came with 17 inch VW wheels and the disc and brake caliper are just the correct size (which means I cannot go any smaller in wheel size.
I want to put some off road tires on but there seems to be very limited space when I've turned the steering wheel full lock.
I'm looking at some Coopers or BF Goodrich but they are significantly bigger tires.
I've seen some members here state they haven't touched the van (lifted etc.) and got away with fitting larger off road tires. Did they use a wheel with more offset to solve this problem or am I missing something?

225/65/17 size should be fine; you may want a spacer on each wheel (I would go with a 25mm TUV approved spacer), The spacer improves the stance of the van; and also virtually reduces the chances of rubbing to zero for this tyre size even with a small suspension drop.
Personally I wouldn't go for any larger tyre (rolling circumference/diameter) without considering changing other things
