I want to put them on my 2011 T5.1 Caravelle currently with 255 40R20. I need to go down in wheel size but have to be mindful of clearance for the Caravelle's bigger brakes. I am pretty sure 18's will be big enough but need to be sure they will fit. Still researching.

At a guess if yours has 340mm brakes then your van will have come with 17" wheels from factory .
You could check on the PR sticker data .

Those wheels and tyres will fit a Caravelle. I have a 2019 Caravelle Executive 4Motion and have steel wheels with 255/55R18 BFG KO2 AT with no rubbing issues and it clears the brakes, the vehicle came with 255/45R18 from new, even 17" rims will clear the Brakes unless you have giant aftermarket brakes can see no issues, those wheels are a bargain even steel rims without tyres come at well over £100 each.
