Having ran both 275/40/19 and 255/45/19 I would pick 275 since it's closer to the rolling radius if the wheel is wide enough, but 275 will be too wide on an 8.5J so 255/45/19 will be the better option in your case. Neither look odd and both will work fine.
 
I’m thinking of changing my 18 Amarok wheels and putting 19 Amarok or 20 wheels.
I want to fill the arches a bit more after lifting it.
Tyre size I think will be best after looking on. The Forum Are
255/45/19 and 255/40/20 it’s a camper and also our day to day car so meet yo keep it comfortable so the 19 probably the best.
Has anyone got the above and if so would it be possible to measure The size from the road to the top of the tyre so the actual full size.
I used the online calculator On a tyre I had and it was out 10mm.

You would think that tyre sizes would be tyre sizes, but even the same size can differ between brands, so you may get mixed results.

Also bear in mind that tyres start off with around 8mm of tread, so when it's worn to 3mm, that will account for a reduction of the overall diameter of 10mm
 
Its a hard decision I have had 16,17,18 and don’t won’t to go 19 then 20 but I was thinking 19 would be more comfortable as I could have a thicker wall.
I also thought tyre pressure and van weight will probably effect it as well.
This is why I thought if anyone has a camper with the above on I can get the size as it will sit on my van. I understand it could be a bit up or down but would help.:)
 
Picked my first set of 19s only cover few 100 miles on Friday hot the tyres striped off yesterday and they sold today so all ready to go .
I’m looking for a good long lasting all season tyre with plenty of tread depth as I tow a caravan and sometimes have to pull off damp/wet grass.most of the time we are around the doors as it’s our day to day van.
I’m going wanting to go 255/45/19 so any advice would be fantastic.

I was looking at all seasons for 255/45/R19 and options look to be very limited. Goodyear Vectors are available but load rated at 100 - not sure if that is enough for you? Plus the are pricey. Budget I found Minerva AS Master might be worth a punt at £73 Minerva AS Master 255/45 R19 104 Y XL car tyre

Let me know what you opt for.
 
Not all season but a good wet option is Uniroyal rainsport 5. 104 rating in that size.
I've been using them for a few weeks in general conditions, ice and muddy building sites and they work a treat.
Also pretty quiet and a comfortable ride.

So will you run them all year round or put summer tyres on ?
 
All year round. Only time will tell with the wear but I'm pretty hopeful.
Apparently they have a harder compound on the outer edges/shoulders to help with longevity

Pretty much £520 fitted from national tyres.
That's with 10% online discount code. I tried a few price match options etc and this was definitely the best deal around.

Other suppliers would price match less a few quid but it would always turn out to be the rainsport 3's and not 5's.
