Earthing advice, possibly with battery monitoring

So Im a bit confused with regards earthing, possibly more so now i have decided I might want some battery monitoring. So far I am fitting a 130ah battery under the drivers seat. This means my installation of DC-DC charger (Victron Oriton TR 12 12 30) is going to be a tad on the cozy side. The fitting instructions from Mr Travelvolts say connect the -ve from the charger to the -ve on the battery then connect the battery to the earth fitting on the body work. Why does the charger -ve not just earth on the bodywork?. The only reason I am asking is because I am thinking of wiring in a Victron shunt and if this were placed just between the battery -ve and bodywork earth it would simplify installation as I think I would struggle to find room for an additional earth bus bar to feed the shunt. Is there a rule of thumb with regards what should be hardwired to the -ve terminal of the battery and what can happily be earthed through the chassis? If I were to add a solar controller how should that be earthed? Can a 12v fridge be earthed to the chassis? My fused distribution box, which will just have water pump, led lights USB chargers how should this be earthed. LED lights should the negative be returned to the fuse box?

Yes, right. Connect your charger(s) and all consumers to earth on the bodywork. Thus only connection to battery negative will be the shunt. This way the shunt can count all the currents in and out of the battery. Bypassing the shunt would render it simply useless.

As above, also your future solar needs to connect to earth on the bodywork.
