@travelvolts instructions on his website detail powering the lights using the existing vehicle wiring, adding a dimmer and also powering from a leisure battery instead. Think you will need the additional door switching wiring but I thoroughly recommend you deal with @travelvolts, he has talked many of us here through our installations.

I'm looking to have 6 LED spotlights in the ceiling with a CBE dimmer switch.
Can i get any LEDs to work with the dimmer switch or does it need to be a certain set?
It depends on how the LED units are internally constructed.
Some (like the Travelvolts ones and the Lumo ones linked above) use individual LED's in series up to a combined Vf just below 12v then ballast resistor as a current limiter,
these will dim fine with a DC PWM dimmer such as the CBE wired in series with their power feed
Martins are most likely three paralleled rows of three in series, the Lumo ones I'm not sure how they will be configured, 19 being a prime number...
The more efficient, more expensive units use an internal constant-current PWM driver instead of the resistor,
these are not suitable for external PWM dimming Similar thread with more info here
