Do I need to cover the whole interior of the van in sound deadening material? Specifically, does each and every panel need 100% coverage, or does 70-80% work just as well?
Does the additional weight and installation time pay off is acoustic pleasure?

Depends what are you trying to achieve. For audio installs - i do full panel, for sound "insulation" around 70% is good enough.
