What's the OEM logic of having 235mm tyres on 7J rim?

I'm planning to replace stock summer and winter tyres on my T6 Transporter with all season tyres. I plan to fit 235/55 R17. Van is used for work, so I would want to keep within manufacturer specs, but I'm slightly puzzled by OEM suggestion of fitting 235mm tyres on 7-inch rim. From what I understand, most recommendations suggest that 235mm is the absolute max for 7-inch rim, with 7.5 or 8-inch rim being a better fit. Why does VW suggest fitting them on 7-inch rim?

I'm guessing more rounded sidewalls should make the ride somewhat softer (which would be GREATLY appreciated) but somewhat compromise handling. Since with 102hp it's not exactly a race car, I think I could settle for that compromise, but would be very curious to hear others' opinions.
 
I would guess a particular combination of ride, performance, handling, refinement, fuel economy and replacement price that VW feel will suit the majority of punters who want to hop in and drive without thinking about such things.

Shortly after purchasing my T32 a few years ago I replaced the rear tyres. One of them had worn unevenly so I decided to replace the pair. I opted for the 235/55/17's to see if it would offer a bit more comfort over the 215/60/17. I don't recall much of a difference, to be honest but the extra width was quite noticeable. If nothing else, at least the rims were better protected!!
 
I currently have smallest 16 inch 205mm stock tyres, which require almost 60psi, which is tooth shattering. Hoping that 45psi will be at least a bit smoother.
