You can get a 235/65/17 in the cradle and up albeit I do use a trolley jack that I keep in the van all the time and I did have to lower the tyrepressure a bit however I also keep a small Milwaukee tyre inflator. That looks like a good upgrade though.
We had the same problem with Nankang tyres, we didn't even get 7K miles. Religiously maintained pressures and the tracking was fine. Spoke to a tyre fitter when we had them replaced and he stated he had seen many similar issues.
UV and lack of use tend to contribute to cracking tyres, however...

Tyre treads look to be the same mostly perhaps slightly more tread on one on the front but minimal difference although we did fit that tyre on the front newer than the others - how do I sort that?

easy to test though. - use a tyrepressure gauge and check all tyres every few days to see if one is dropping. ( if not the look at ABS sensor)

ABS sensors measure the speed of rotation of each of the wheels. The tyrepressure warning is triggered when one of the wheels average rotation changes over time from the reference you set indicating the tyre has changed size.

Stored pressures are set as required on screen which is showing in brackets , as once u drive for qtr Mile the picture of the transporter changes from dull to vivid and on screen it says tyrepressures all Ok .

It was likely the different wheel speeds as you were getting towed and wheels were intermittently moving at differing speeds due to the mud and wheel slip that triggered the warning. When you check your tyrepressures before your long trip, remember and reset the TPMS.

No, it’s too low. A T28 and 30 should have 103 rated tyres (or above). It will say on your tyrepressure sticker in the door jamb.
As mentioned above, also check your wheels if they are aftermarket ones as they may not be correctly load rated too.
