Briefly, the software update and oillevel check I had on mine, sorted out the issue. Get it to the dealership to sort out. It's under warranty so don't wait.
6.1’s are well known for the ‘oillevel too high’ error due to regens not being completed.
I loosely watch mine get to 95% accumulation and then keep a closer eye on it once the regen takes place.
Further to the discussion on the grade of oil recommended for the T6.1 the label in the engine bay of my van states 0w30 C3 grade, so did a bit more digging on the differences between C2, C3 etc. and concluded that C3 is better for a harder working van.......but not easy to find in 0w30.

When you say ‘the oil was fine before we left’ is that because you did a physical check of the level on the dipstick? Or is that an assumption because the reduce oil warning hadn’t come on?
If it’s the first one then where has the extra oil volume come from in 1500 miles?

By way of update I've finally managed to get the van booked in to VW and they have identified that it is the oillevel sensor that was causing the issue (incorrectly reporting highoil temp). I can only assume its a dual sensor for level and temp.

In addition to the good points raised above, check the oillevel, if the oil is high on the dipstick, i.e. over the maximum, this could indicate dpf problems and failed regenerations.
It's unlikely to be low as the seller should have checked it prior to your visit.

Heating not changing. Found that to be a white plastic gear on a servo. On order. Apparently small hands to fit it.
Also highoillevel randomly. Done a dip stick check and was on high limit. Ordered a suction pump to lower level 500ml. Hopefully over filled last service.

Just to update on this (and it isn't good news).
I booked it in to a DPF specialist and following 2 hours of diagnostics, the DPF filter is damaged beyond repair and the oillevel is above maximum and contaminated (was only changed a few months ago).
Way forward now is:

Cheers for the reply roadtripper. Am I right in thinking DPF regen won’t work with the faults existing? The level was showing as 40 something so not crazy high. The DPF was done by previous owner’s mechanic not too long ago, full service history and oil and filter changes every 6 months or so so...
Possibly a defective EGR however with that many re-gen’s and with DPF soot levels that high is there another more important issue to resolve first?

What’s the engine mileage?
What’s the oil consumption mL / XXXX miles if any?
What MPG are you achieving and has it dropped...
The level being at the top of the hatch isn’t a problem and the indication on the dash’ is a warning.
Why it’s risen (if it has) could be a problem if nobody has added oil, it could be down to fuel dilution. I suggest you monitor the cold level and see if it continues to rise.

I’ve had exactly the same issue with my T6.1, had the software update which fixed it. There’s a few threads on here that explain the issue better than I can, something about the way euro 6 diesel engines work and fuel dilution.
I've just had an oil analysis back with highlevels of soot, van does seem to be doing a regen every 150 miles when it hits 24g regardless of driving, do you think this would point to goosed egr valve ?
Edited to add sample oil was 5k old and soot level was 1.3%!
