Accelerator pedal

Hi all, I've noticed using the Casrita app my accelerator pedal only moves to 75% maximum, is there a way to adjust this? There seems to be a metal bar which restricts the pedal movement can i just remove that or will it break anything else (last picture)? my van is a 2015 T5.1 114bhp CAAD with a stage 1 tune and EGR delete if that helps, i've attached some pictures of the pedal box.
