IMO 235/60/17 size, fill the arches by an extra 11mm all round; 11mm more ground clearance; slight increase in gearing. Just look so much better than stock imo.

To get the maximum utility out of your T6, I think the best 2 options are:
Both tyres have: deep tread; good voids Mud and Snow rating; tuff; 3PMSN winter rating; good wet grip; reasonably quiet

High abilities in all conditions; on road; off road; winter; summer; deep standing water etc etc. Run them both all year round, particularly in the UK, where summers aren't to hot, for too long

Will last 40k+ miles and still have 3mm tread left

Michelin are more expensive, are now fitted as standard to many NHS ambulances as all-seasons; have very high load ratings, so very tuff, but may be a stiffer ride; look really beefy; Michelin is probably the most respected tyre manufacturer in the world.

Nokian are cheaper; great reviews; I've run them for 40K miles, they are brilliant; very grippy off-road; brilliant in snow- better than some full winters
 
Just picked up some new Amarok 'Cantera' wheels

wondering if I definitely need the 255/45/19 spec tyre( with a dsg, t32 4m weight)

over 245/45/19 say. I think these look and fit better as rim is an 8J)
and are better suited to original 215/60/17 in terms of Speedo.

My cantara alloys have 245/45/19s and I personally think they look just right. The tyre wall is inline with the rim

Make sure you get the load rating for the t32 ....103 and above but you’ll probably only find them in 255 45 19 /104 from nexen
 
I can’t find what size the rear spacers should be to bring the Amarok wheels 19, in line with the front I think it was 15mm but can’t find the post any ideas ? And do I need hubcentric one ?
 
15mm according to the posts I’ve read. I’m moving my fronts (15mm) to the rear when I swap mine over.
 
The Amarok wheels stick out about 10mm more than the T6 ones (10mm less ET Off-set),
so you need 10mm less spacer than you would with the same width tyre on a T6 wheel.
I'm running 235 tyres on a Amrok wheels; for me the max spacers would be 25mm on each rear; 10mm on each front.
100% yes to hub-centric spacers; TUV approved is well worth considering also.
