Coolant light flashing

Got a weird one that hopefully someone can help with!

Started van yesterday from cold, coolant light starts flashing after 500 yards. Assumed it would be low coolant, pulled over and levels were fine.

Carried on driving for another few miles, the temperature never rose. I turned off the van, went inside a shop for 10 minutes. Came back out to restart the van and find the temperature now reading fine at 80, then rose to 90 once driving and was fine.

Same thing happened again today, restarted the van once warm and has been fine since.

I’m assuming the level sender is the cause of the issue but not sure if that’s the reason why the temperature gauge isn’t reading correctly?

Appreciate any help!
 
No, all sorted now. I tested the level sender and temp sender and both were fine. I retraced what I'd done recently and I replaced an EGT sensor bank 1 sensor 1 with a Bosch one, turns out that was causing the issue. Replaced with genuine and all is well. Don't ask me why or how!
