Locking doors and switching alarm sensors off

Also new to the VW Transporter T6.1. I have read the manual regarding central locking and safelock, quite confusing. I have a full bulkhead fitted so cant lock vehicle using the door lock button hence disabling the internal sensors, so would i be safe to say, if i lock vehicle from inside with key fob and press twice I will be OK for sleeping in the back? Or do you also have to uncheck it on the infotainment system every time after you lock the vehicle.
Apologies for questions but this doesn’t seem straightforward to me.

Yes that should work. Easy to test.
first Press you get the clonk clonk (lock then deadlock) and the a third clonk with the second press as it un-deadlocks. Then you should be able to open from the inside, but you will set off the alarm, so you need to remember unlock with the fob.

We have camper but don’t think we have ever locked while in it.

If we’re on a site, I don’t bother locking the doors. If we’re stealthing it, I use the button on the drivers door. You never know who’s around.
