Sense Check - Time to replace shocks/springs

It took CRS about an hour 15 to do all four corners plus ARBs. And about 30 mins for a Hunter alignment elsewhere. So 2-3 hours all in would be reasonable.

I've been quoted 5 hours to install a KW V1 setup on my T32 at a VW/German specialist. That's install and tracking.

Seems a lot. Maybe not. What say you?
It depends on what tooling they have. If they have a decent vehicle lift then it's going to be a lot easier than doing each corner on a trolley jack...
For a firm like CRS, this is their bread and butter. For others, it may not be that regular.
Does the VW specialist offer Hunter alignment? I doubt they're just using tape measures but if it isn't a decent alignment, you may end up paying to have it set up again if the tyre wear and/or handling isn't good.

If you haven't bought the new suspension yet then get Steve @CRS Performance to supply and fit.
His lads took about an hour to fit the H&R coilovers on our camper and it was half an hour locally in Northampton on a Hunter rig to align the wheels, throw in new tyres at a National Tyres, again locally for another hour and still 2 1/2 hrs left of that 5 hrs.
