Plenty info on here about what equipment to buy for the above but I'm wondering if there is anywhere in Central Scotland that I can drive to and buy equipment?
A physical shop seems like such a weird idea these days

I know you're after a physical shop, but I can highly recommend a company called Rayne Automotive.
I just purchased a fully wired 12V split charging system from them.
It all comes mounted on buffalo board all you have to connect is the main power feed from the battery and your 12v items.

It's looking like an online purchase now anyway. And I'm actually between Rayne and simplysplitcharge. But the way you have put yours sounds like a ready made system almost, I'll check them out. Thanks!
I have a T5.1 but with the 'dumb' alternator. I'll probably book a call with Rayne as I'm confused on the whole DC-Dc thing. I know I don't need it but would one give me future options to add 240v hook up etc. I'll find out!
This is the set up I used from Rayne …
Input from vehicle battery in to Victron unit, then it splits the charge out to the AGM leisure battery and the 12v feeds.
It includes an isolator and fusing
