You shouldn't be surprised - you're not just dropping from 180 to 150, you're also moving to an engine that's strangled by its emissions control systems. BTW, if you search the forum, you'll find that the Bosch ECU has now been cracked by at least one company and can be mapped.

It all sounds fine. Ignore the percentage as that is normally rubbish on something like a BM2 monitor. The smart alternator on a T6 will only charge the battery to about 80% so it has room to charge while braking etc. When you unlock the van lots of modules fire up and will pull the voltage down...

What you are describing is a Shuttle configuration. All the holes and bits are there, I understand. Do some research on here about 3rd row seats, there's bound to be the information you need.
