I went staggered and 20s for the moment. With a slightly different 35 8.5 front and 40 on a 10 rear.Always staggered for me. I love the rear wheels sitting wider than the fronts, it reminds me of old school cool.
I liked my 20s, but 19s seem to be my sweet spot. Although I'm looking forward to getting my banded 17s back on once I get a pair of 9.5s to swap out the 10s at the rear.
I'm running 19's and I have found that sweet spot after great expense.

19x8.5 ET45 all round.
Running 104 rated 255/45/19

The van never bottoms out, and it never rubs or catches.
I have gone across a field with no issues.
It's planted at speeds, yet very comfortable.
Laymen's terms it's 2 fingers between the tyre and arch at the front, and 3 at the back, giving tolerance for any extra weight in the rear if needed.
(oh and I don't have huge sausage fingers)
Hi could you send me a pic as I’m looking at Amarok wheels and not sure on which tyre sizeI have Amarok 19" rims with 275/40 R19 tyres plus spacers and works perfectly on my Caravelle.
But yes it is tight, only few mm clearance.
I really like them in 19sJust got my Wolfrace Dortmund black/polished with 255/45/19 tyres (lowered 50mm on Eibach Pro springs from Customvanz).
