Hahaha! Welcome to the forum @Ozbar jim you'll find these vans can become money pits as they are so configurable. There is so much you could do. Be strong, choose what needs to be done, do it, then enjoy it. There is always more to do and lots of time to do it.
Im sure if you search on wheels on the forum you'll find some really sexy wheels and all the right tools to get your spacers and tyres right.
 
Well this is it folks, my alloy rims have an offset of 37mm on a 9J, tyreless as yet but after sifting through what seems like a billion pages on here this month for the best size tyre to suit ( i.e. oem suspension riding on cart tracks and fields trying to find the best fishing spots on the Wye and Trent ) i've plumped for these on my newish T6 to be picked up at 1400hrs tomorrow ......

Ditch finders, Nanking are terrible tyres, my mate who is the main importer of Nanking convinced me to try some, never again, the rubber started de-laminating , if your going budget, try accelera I’ve had them on on a few vehicles now, made by continental apparently.
 
Vote here for accelera via openeo. 6 months in and no noisier than the stock 16" Hancocksm and no ditches.

Landsail were my second choice but after putting them on my focus 19" rims found them to be very noisy.
 
275/35/20 on 8.5" front and 10" rears no rubbing but the van hasn't been lowered yet.

Just asking as have exactly the same size wheel/tyre combo as you and I’m just getting ready to lower mine.
Is there any rubbing?

No, I'll not be lowering the suspension, I,m a fishermen so it's going over a load of rough and rutted tracks. I finished up with 255x45x20 accellera and it drives fine, although a bit thirstier. Looks good too.
