And how would you fit one either side off one cable?

40 mm holesaw. Daisy chain them or run one cable to each from consumer unit.

That looks smart, does the full pillar need to come off?

You could do it by just releasing one side but, in my experience, you always make a better job of it by removing top and bottom trims. It might take 15 minutes longer but you end up with a better result.
